A Day in the Life: Communal Server

 

Arrive @ 4pm

Prepare restaurant for dinner service

These preparations include: prepping bread service, setting tables, switching out plates for the chefs, folding napkins, and any last minute cleaning.

Confirm reservations

This is the time when we get to call all of our treasured guests and remind them of their reservations that evening. Not that they could forget, am I right?

Stock beverages

We go through a lot of beverages each day. Whether we need to prepare more of our refreshing hibiscus Arnold Palmer, pick mint to be used in the fresh lime, make a steaming pot of Charming Beard coffee, or try out a new drink recipe for the staff to try at family meal, we have always got something brewing in the beverage department. Not to mention wine and local beer!

Family meal!

Our favorite time of day. This is when we get to sit down together as a family to try any nightly specials, discuss company philosophy, catch up with each other, go over our layout of tables for the evening, and generally laugh and have a good time. We also decide what playlist of music will be gracing our ears for the evening.

Service

Come 5 o’clock, we are ready to start making some memorable food experiences. We love to share these with regulars and first-timers alike! We’re so passionate about our menu that all night you will hear us gushing over the watermelon salad, topped with pickled red onion, feta cheese and a cucumber-mint purée; fried chicken with a white bean and tomato ragout; or our crispy cubed polenta topped with a sweet corn relish! Top that all off with a butterscotch pudding with a chocolate cookie crust, salted caramel and whipped cream, and you are guaranteed to leave with a smile on your face.

Closing time

After 10 pm when the last of our guests slowly start to trickle out the door, our real work begins. Turning the place back into the restaurant it was before service takes some work. You can find us sweeping, wiping, polishing, taking out garbage/recycling and, you guessed it, stocking more beverages! We tend to have a lot of fun while doing so and partake in discussion about food, music and the events of the night. After all is said and done, the restaurant is once again clean and peaceful. Although we are leaving, we can’t wait to come back the next day and do it all over again.

Sun River Gardens

Sun River Gardens Herb Class

On State Street in Orem, a little north of Pizzeria 712, Sun River Gardens runs a beautiful garden store and nursery. We picked our flowers and herbs for the Pizzeria 712 patio there and have worked with them for several years on other outdoor projects including past patio plantings and Christmas trees.

Our photographer Alyssa recently attended a class they held about herb gardening. We love their commitment to creating beautiful garden spaces and educating members of the community to enhance their lives through growing and planting gardens. The Sun River team has curated a beautiful store, with gardening tools and supplies, heirloom variety flower, vegetable and fruit seeds, books about gardening, recipe books for using home-grown produce, and unique kitchen ingredients such as flavored honeys and vinegars.

The next time you are heading that way, stop in to look around their greenhouses or to pick Tonya’s brain about herb gardening. ODN



A local dinner group recently came to enjoy dinner at Pizzeria 712. This dinner group only eats at local, authentic eateries in the Provo/Orem area and decided to come to the pizzeria recently. They call their dinner group ODN which stands for Obscure Dinner Night and have a rather unique way of organizing. Instead of making phone calls or sending out a weekly email to coordinate, the group plans on eating everyone Monday night at 7:30pm. What is so unique is how they find out where they are eating Monday at 7:30pm. The dinner location is posted on the twitter handle, twitter.com/obscuredining, that everyone follows. The leader of the group posts the dinner location for the week on Monday morning and everyone that wants to come, checks twitter for the location and shows up at 7:30. Sometimes 20 people show, sometimes 5 people show up and as many as 42 people have come to a single ODN. ODN was started May 1st, 2009 and have had over 50 Obscure Dinner Nights. They have had over 140 individuals come to their dinner night and new comers show up each week. This group is made up mostly of mid aged singles in the Provo/Orem area and are open to anyone coming to dine with them, just don’t expect anyone to give you a phone call invite.
